Description
Produced with a combination of Pommard and Dijon clones, each of which were fermented individually. The fruit was 100% de-stemmed followed by a long cold maceration, fermented slowly, gently pressed and put to barrel. This wine has been filtered and is unfined. It has been aged in French oak barriques, of which 30% were new for 11 months. The finished wine is blended from a selection of barrels and bottles on the 31 March 2021.

Vineyard
Mondillo is a 23 hectare (54 Acres) single estate vineyard at Bendigo, a sub-region of Central Otago. The vineyard landscape is made up of three terraces consisting of free draining alluvial soils.
Viticulture
The vineyard is meticulously managed to produce low yielding, high quality, concentrated fruit. Mondillo fruit is always hand harvested when the fruit is at its physiological ripeness ensuring the optimum flavours are captured with a true reflection of terroir.
